Holt Academy nears completion
HOLT — Trina Trimm and her husband Dave, a former law enforcement officer who developed the St. Lucie County school resource officer program, aren’t the sort of retirees who kick back for a well-earned rest.
Soon after their arrival in Holt, they opened the Cozy Corner Grill on U.S. 90. Trina Trimm’s family had owned a restaurant in her native Belfast, Northern Ireland.
The popularity of the restaurant, often a focal point of Holt social life, inspired another project: a combination day care, preschool and community learning center.
“We realized there was no preschool anywhere in the area,” Trimm said. “On a placemat at the Cozy Corner I drew what would be the ideal child care and preschool. Before I knew it, my scratching on a placemat was being built.”
Holt Academy is nearing completion on more than two acres of land a half-mile west of the restaurant. It will revive the Holt Gophers, the team mascot for the long-shuttered Holt School.
